Navigos Searchs client is the leading venues of elegant international cuisine and professional service to satisfy all the most demanding guests. In order to reinforce and support the service quality and business development, our client is urgently looking for an F&B Director.
+ Responsible for the operation of various F&B sub-departments such as Restaurant, Bar & Lounge, catering.
+ Survey market prices, monitor market condition impacts profits, business volume and services to ensure a competitive position.
+ Create a list related to menus and beverage (including wine list) combined with the menu price structure along with Executive Chief.
+ Communicate effectively with Chef and all kitchen personnel to ensure efficient consistent of kitchen and front of the house operations.
+ Enhance customer satisfaction through reviews of new techniques for dish presentation and preparation.
+ Promote special events and club member dining through various creative ways.
+ Communicate information effectively among all sections and manage staff line-ups of all functions.
+ Implement and ensure all sanitation, preventive maintenance, safety, policies and procedures for the F&B department (companys standards compliance for quality of products and services) are consistently met.
+ Manage records of daily business volumes, special events, food covers, and house counts.
+ Plan and prepare procedures for banquet functions and special events.
+ Improve the standards within the department and propose new concepts forth.
- Customer services:
+ Handel timely all guest complaints and advise GM about appropriate remedial actions taken.
+ Make sure VIP client satisfaction (appropriate menus & services), take good care and maintain good relationship with them.
- Personnel Management:
+ Ensure all F&B staffs perform the policies and procedures on dress codes.
+ Manage records on work and vacation schedules, attendance and absenteeism, appearance, standards, payroll, turnover and disciplinary action of all F&B staffs.
+ Assign work and side duties to staff in related to departmental procedures, handle all problem that arises throughout the shift.
+ Plan long-term staffing needs according to department demand.
+ Develop orientation and implement training programs to develop the professionalism of new and experienced employees.
+ Perform the necessary motivation and recognition activities to maintain and improve the efficiency of employees’ performance.
- Cost control:
+ Ensure the operating budget for the departments are attained according to the budget goals and be able to maximize profits.
+ Collaborate effectively with the Financial Controller in process monthly inventory control to manage food costs and other related expenses.
+ Monitor handling procedure related to glassware breakage and food waste; conduct monthly stock-take and report to GM any discrepancy.
Yêu cầu công việc
- Bachelor/College Degree in related majors: Management, F&B, Hospitality,…
- English is required (French is preferred)
- Have 3 – 5 years’ experience in F&B Management
- Strong knowledge of food & beverage products.
- Excellent communication and interpersonal skills.
